Beef with sweet potatoes, black beans and corn, buckwheat and garden salad

Quest for great nutrition and flavor, that doesn’t take hours to make, is over. Let me share this fantastic meal option that is ready in half an hour. Timing preparation is key so that everything is ready at the same time.

Ingredients:

1 lb of ground beef, 1 large onion, a few garlic cloves, 8 oz of frozen sweet potatoes, 8 oz of frozen corn, 1 can of black beans, 1 cup of dry buckwheat grain, garden salad (romaine lettuce, tomatoes, cucumbers, green onion, avocado, dill, feta cheese)

Directions:

Chop onion and garlic and add to the sauté pan with a little olive oil. Stir in ground beef. Add your favorite spices and continue to sauté until beef is browned. Add frozen sweet potatoes and corn.  Stir and cover until vegetables are fully heated up.  Add beans and continue cooking on low fire for at least 15 more minutes.

In the meantime, prepare the buckwheat.  Put 1 cup of dry grains into a pot and turn fire on high.  Toast for a minute or so, then add two cups of water.  Bring to a boil, then cover with a lid and lower the fire.

While the beef and buckwheat are simmering, chop the vegetables for the garden salad. Add feta crumbles and drizzle with olive oil.

After 15-20 minutes, check on buckwheat and if all the water has evaporated, turn the fire off, add some butter and fluff it up.  Turn the beef off as well.  You’re done!
