Ingredients:
- 3 1/2 cup of flour
- 1 cup of sour cream
- 2 eggs
- 1 cup of cooked and mashed sweet potato
- 1 cup of sugar
- 2 tsps of baking powder
- 1 tsp of baking soda
- 1 tsp of cinnamon
- 1/2 tsp of sea salt
- vegetable oil for frying
Instructions:
Step 1 – Fill a large pot half way with oil and put a food thermometer in to make sure the temperature of oil stays at 360 degrees.
Step 2 – Mix the wet ingredients first (eggs, sour cream, sweet potato). Add sugar, salt, baking power, baking soda, and cinnamon. Mix well.
Step 3 – Start adding the flour one cup at a time. Place on the counter and start kneading the dough until it’s no longer sticky.
Step 4 – Roll it out until it’s about 1/4 of an inch thick. Use a donut cutter or a glass to cut out the shapes.
Step 5 – Once you are ready to fry, very carefully start dropping them into the hot oil one at a time with no more than three or four frying at the same time.
Step 6 – Keep watching as they fry very quickly! Turn them over to the other side and continue frying. Once you see them turn golden brown, remove them from the pot and place on a paper towel.
Toppings:
Simple glaze – Mix powered sugar with milk to get the desired consistency, add a few drops of vanilla for extra flavor. Dip one side of the donut into the mixture. Set aside to cool.
Cinnamon/sugar – Mix 1/2 cup of brown sugar and a few teaspoons of cinnamon. Roll warm donuts in the mixture.
Chocolate – Melt chocolate chips on low fire (be careful not to burn!). Dip one side of the donut into the hot melted chocolate. Set aside to cool.
Other variations – Add food color to your glaze and use sprinkles after glazing.
