Vegetables don’t have to be boring or bland. I try to find creative ways to add a vegetable side to make my dinners fun and enjoyable. This also provides variety to your food choices. The below recipe is my mom’s. It’s simple and easy to make. It doesn’t require a lot of time either which is always a plus. Please note these are not zucchini fritters which take longer to fry and therefore use a lot more oil. Since the batter in this recipe is pureed, the oil amount is minimal. Zucchini is a great complex carb that provides energy and nutrition. And it tastes amazing!
Zucchini Pancakes recipe
Ingredients: 2 zucchinis peeled and cut into wheels, 1 medium onion chopped (sweet Vidalia is the best), 1 large egg, 1 cup of flour, 1/2 teaspoon of salt
Directions: Combine zucchinis, onion and egg in a deep bowl and using immersion blender puree until you don’t see big chunks. Add salt and flour and mix well. Brush a non stick pan with olive oil and ladle zucchini mixture. Fry for a couple of minutes on each side until golden brown. Serve with sour cream. Enjoy!
