Those of you who know me are well aware of the fact that I make an amazing banana bread out of super ripe bananas. I believe that snacks can be both healthy and super delicious. This recipe requires no additional sugar except for what’s in the bananas and optional chocolate chips. Don’t worry, it’s sweet enough and kid tested!
Ingredients
3 or 4 very ripe bananas, 3 large or 4 medium eggs, 2 cups of flour, 1 tbsp baking powder, 1 tsp baking soda, ¼ tsp sea salt, 1 tsp vanilla extract, 1 tsp cinnamon, ½ cup softened butter, 1 cup of chocolate chips, ½ cup of walnuts, 1 tsp of butter for greasing
Preparation
Mash bananas with a fork, add eggs and mix well. Now add baking soda, baking power, salt, vanilla extract, cinnamon and mix well. Next add a cup of flour, followed by butter, followed by the second cup of flour. Mix well. Batter should be pretty thick. Last, fold in chocolate chips and chopped walnuts.
Grease two baking dishes with a little bit of butter. I use the ones I would make a meatloaf in. They are perfect for our purposes. Split the batter between the two dishes. Now, the reason I use two instead of one is because it literally cuts baking time in half and results in an amazing crunchy crust while remaining soft and moist inside.
Bake at 350 degrees for 45 minutes. Let sit for a few minutes then serve while it’s still warm. It’s sooooo good! Try it and let me know how what you think.
