Light Dinner Option

For those of us who get home late after work, there’s always a dinner dilemma.  You don’t want to eat a heavy dinner late at night but you are still hungry and you need something substantial.  So, this is what I do when I just want a light dinner that will still fill me up but not land heavy so close to going to bed.  Let me introduce you to my Chicken Salad.

I always have roasted chicken in the fridge because there are so many variations you can do with it and quickly too.  So in this situation I would make a regular salad with lettuce, avocados, tomatoes, cucumbers, onions, carrots, feta cheese as usual but then I’ll add my roasted chicken that I would first shred.  To make it even more awesome and super flavourful, add chopped apple, dried cranberries and pecans.  Season with sea salt and fresh pepper, squeeze some lemon and pour a little olive oil.  Toss and serve!  So good, and so filling, but not heavy.  Enjoy!
