This dish can best be described as a warm hug. It’s a comfort food that is also filling and satisfying, not to mention packed with awesome nutrition!
Ingredients:
1 peeled butternut squash (you can also use pumpkin, it’s just as good!) cut into chunks, ½ cup of rice, 2 cups of water, 1 cup of milk, ¼ cup of parmesan cheese, 1 table spoon of olive oil
Preparation:
Place butternut squash in a large pot with a cup of water. Boil until soft, then mash with a potato masher. Add rice and another cup of water. Salt and pepper to taste. After rice has absorbed almost all water, add milk. Stir and simmer it until creamy but not too liquidy. It takes about 35 – 45 minutes for the whole thing. When done, turn off the heat and add a little olive oil and parmesan cheese. Enjoy!
