I always have roasted chicken in the house because it’s such a versatile ingredient that be turned into a million different meals and it’s packed with much needed protein. This is one of the dishes that can be quickly made for dinner. It’s so filling and nutritious that it will become your fave in no time.
Ingredients:
½ roasted chicken shredded or cut into chunks, 1 onion, 1 bell pepper, 3 wedges of garlic, ½ pack frozen organic corn, 1 can of red or black beans rinsed, ½ jar of your favourite salsa, shredded cheese
Preparation:
In a sauté pan add a little bit of olive oil, chopped onion and garlic, then add chicken and chopped pepper. Stir until completed heated. Add beans, corn, salsa and heat through. Finish off with shredded cheese. Serve with rice or whatever other grain you like. Enjoy!
