This is one of my go-to dishes when I am looking for a filling and nutritious meal that is packed with veggies, complex carbs and all around great flavour.
Ingredients:
2 medium beets, 2 medium carrots, 3 medium potatoes, ½ onion, ½ pack frozen organic peas, 5-6 pickles, bunch of dill, bunch of parsley, olive oil
Preparation:
Cook beets, potatoes and carrots until soft. Let cool then peel and chop into little squares. Defrost peas but submerging into boiling water for just a few minutes, then add to the chopped veggies. Add chopped onion, pickles, dill and parsley. Salt, pepper to taste and finish with olive oil. Mix and enjoy!
P.S. I personally also add pickled cabbage but you omit that if you don’t like it. I like it because it gives it a super awesome crunch!
